Dr. George Melillos has been training teams on Microsoft Copilot since it first became available, for companies and government services across Cyprus. He is an Associate Professor at the American University of Cyprus, an AI researcher and a PECB Certified ISO/IEC 42001 Senior Lead Implementer, so his training covers both sides of Copilot: how to get real value from it, and how to use it safely. Every AI seminar he delivers covers the leading AI assistants, Microsoft Copilot, ChatGPT, Claude and Gemini, and where relevant Perplexity and Kimi, typically for groups of 18 to 20 participants.

What makes Microsoft 365 Copilot different
Most AI tools sit outside your daily work. You copy text in and copy the answer out. Microsoft 365 Copilot works inside the applications your people already use, and it can draw on the emails, files, chats and meetings each person is already allowed to see. That is its real strength, and also the reason it needs clear rules.
Outlook. Summarise long threads, find what is still pending and prepare draft replies without leaving the inbox.
Excel. Analyse tables, spot unusual values, suggest formulas and prepare data without moving files between applications.
Teams. Recap meetings, decisions, tasks and open items, where transcription and the right permissions are in place.
Word and PowerPoint. Turn notes into first drafts, rewrite for a different audience, and build a presentation from an existing document.
Agents, Agent Builder and Copilot Studio. Create specialised assistants with their own instructions and knowledge sources, for example one that answers questions from your internal procedures. Copilot Studio adds connections to other systems and automated workflows.
Not all of these are available in the free Copilot Chat. Several need a Microsoft 365 Copilot licence and the right configuration. Every programme starts by clarifying what your organisation actually has, so expectations match reality.
For companies
Copilot pays off when it is used in real tasks, not in demos. Training is built around the work of each department: finance and accounting, legal, HR, sales, administration and management. Participants practise on their own type of documents, learn to write clear prompts, and build habits for checking results before they reach a client.
For government and public services
Public organisations face questions that companies often do not: who can see which documents, how classified or sensitive material is protected, how decisions are recorded, and how the use of AI is explained to citizens. With 20 years at the Cyprus Ministry of Defence, six of them as IT Director, Dr. Melillos knows these questions from the inside.
Training and advisory for public services cover permissions and access before Copilot is switched on, sensitivity labels and the handling of confidential information, GDPR and data protection, human review of AI-assisted work, and the obligations of the EU AI Act. The approach follows the logic of ISO/IEC 42001, the international standard for AI management systems.

Frequently asked questions
Who provides Microsoft 365 Copilot training in Cyprus?
Dr. George Melillos, Associate Professor at the American University of Cyprus and PECB Certified ISO/IEC 42001 Senior Lead Implementer, has been training teams on Microsoft Copilot since it first became available, for companies and government services across Cyprus.
What is the difference between Copilot Chat and Microsoft 365 Copilot?
Copilot Chat is available to many Microsoft 365 users at no extra cost and works mainly with what the user gives it. Microsoft 365 Copilot needs a separate licence and can use the emails, files and meetings the user already has access to.
Is Microsoft 365 Copilot safe for company data?
It respects existing permissions: it only shows what a user can already see. That is why permissions and sensitivity labels should be reviewed before Copilot is switched on across an organisation.
Do you train government and public services?
Yes. Programmes for public services cover access permissions, confidential information, GDPR, human review of AI-assisted work and the EU AI Act, following the logic of ISO/IEC 42001.
How long is a Copilot training programme?
It depends on the goal: from a short executive briefing to hands-on sessions for each department, champions training and advisory support. Every programme is designed around the organisation’s own work.
Can the training be co-financed by ΑνΑΔ?
Company training can often be delivered as an in-company programme with ΑνΑΔ co-financing, subject to its rules.
